Introduction

Number of Servings: 2

Ingredients

    1 cup of leftover rotisserie chicken (chopped)
    1 cup of heirloom grape tomatoes (or other cut in half)
    1 cup of chopped apples
    4 cups of spinach, chopped
    1 lb of shrimp, raw (21-40 count, peeled and deveined)
    1 medium onion chopped
    4 tsp of olive oil (split)
    1 lime (juice)
    fresh ground peper (to taste)
    2 cloves of garlic
    Optional: Cajun Seasoning/Cayenne pepper.

Directions

Mix chicken, tomatoes, apples, spinach, lime juice, balsamic vinegar, and 2 tsps of oil in a bowl. Add pepper to taste. Cover and chill for at least 1 hour.

In a pan, saute onion and garlic with 2 tsps of oil until clear. Add shrimp. Mix well. Cook until Shrimp are fully cooked, but not over cooked. Add a little cajun/cayenne seasoning to taste if you want spice.

While shrimp are cooking, remove salad from fridge. Stir and serve half on each plate. Place half of shrimp mixture when cooked on top of salad. Eat and Enjoy!

    Excellent. Used a white peach instead of apple, and lemon juice instead of lime. Mesclun salad instead of straight spinach and chopped whole fresh tomatoes. Added some chopped zucchini, too. Everyone loved it--portioned kids first, then added spicy crab seasoning for the adults. Added to favorites - 7/11/08
