Introduction

This is a cake adapted from Yahoo Food. I used the fat free sugar free instant pudding mix. Cut the eggs to 2 whole plus 2 whites vs 4 whole, used Smart Balance Omega vegetable oil, limes were on sale so used the juice of 4 fresh limes completing amt with the 'ReaLime' bottled juice.

Even my picky eaters came back for seconds and thirds thru the evening !! I had cut the 9x13 pan into 24 pieces .. there are only 4 pieces left over. This is a cake adapted from Yahoo Food. Ingredients

1 Lemon Cake Mix

1 pkg instant pudding fat free sugar free

4 tablespoons lime juice and water to make 3/4 cup liquid

1/2 c vegetable oil

2 whole eggs

2 egg whites

1 1/2 cups powdered sugar

3 tbsps lime juice, maybe a bit more for glaze

Directions

Preheat oven to 350 F. Spray 9x13 pan with PAM and dust with some of the dry cake mix.

Combine everything except the sugar and 3T of the lime juice. Mix all well with whisk. Pour into prepared pan.

Cook at 350 F for 45 minutes.

Pour on glaze while cake is still hot. Then cool to serve.

Makes 24 servings, approx 2" x 2".
