Ingredients

1 large Onion, sliced
1 cup, strips Bell Peppers (any color)
1/2 Ketchup
1/4 cup Jack Daniel's BBQ Sauce
1/2 cup (8 fl oz) Water
45 oz Beef chuck
Tips
Boneless chuck roast is not a lean cut of meat, but you can make the meal more healthy by trimming away any excess fat before you serve it. I figured serving size at about 4 oz.
Directions
Place roast in baking pan. Spread onions and peppers evenly over meat.
In small bowl, combine ketchup, BBQ sauce and water. Pour over top of meat and veggies.
Cover pan with aluminum foil and cook your chuck roast for approximately 45 minutes per pound in a 350-degree-Fahrenheit oven.
Remove meat from pan and serve topped with onions and peppers.
If desired (after skimming fat from the liquid remaining in pan) Use the remaining liquid to make a flavorful gravy by simmering them over low heat and whisking in 1-2 teaspoons of cornstarch.
(the roast I used for this one was 2.86 lbs which is reflected in the calorie count which cooked for a round 2 hours)
