Introduction

Buffalo Chicken Meatballs

2 lbs Ground Chicken breast
1/2 cup finely grated zucchini (grated on the smallest side of box grater)
1/2 cup grated onion
1/2 cup grated celery
1 teaspoon garlic powder
1 1/4 teaspoon seal salt
3 egg whites beaten
olive oil cooking spray
1cup frank's red hot wing sauce
walden farms bleu cheese dressing (for dipping)

Ingredients

    907 gram(s) Chicken - Extra Lean Ground chicken
    .5 cup, mashed Zucchini
    .5 cup, diced Celery, raw
    .5 cup, chopped Onions, raw
    1 tsp Garlic powder
    6.25 gram(s) Himala salt 1/4 tsp
    9 tbsp All Whites Liquid Egg White (3 Tbsp=1 large egg's white)
    16 tbsp Buffalo Wing - Frank's Red Hot Wings Sauce (serving size 1 tbsp / 15 ml) (by MIKEGINA)
    1 serving walden farm calorie free dressing

Directions

Preheat oven to 350 Degrees F. In a large bowl, combine chicken, grated vegetables (slightly drained), egg whites, and 2 tsp of wing sauce. Gently Mix by hand the ingredients. Do not squeeze or overmix.
Spray a baking sheet with olive oil spray. Scoop meat mixture into 2 tbsp sized portions. place on baking sheet. Bake for 15 min in center rack. Remove from oven. Pour wing sauce in bowl and transfer meatballs into the bowl and toss to coat. let the meatballs sit in the sauce while you raise the oven temp to 450. Drain the moisture from the baking sheet, and wipe. Apply fresh coat of cooking spray then transfer the meatballs and sauce onto the baking sheet. Bake on top rack for 12-15 minutes. Serve with green onions or parsley and walden farms bleu cheese dressing for dipping.

Serving Size: makes approx 35 meatballs (4 servings)
