Ingredients

    3 cups Flour
    1 1/2 tsp Baking Soda
    3/4 tsp Salt
    1/2 cup Butter (can substitute margarine or vegetable shortening)
    1 cup Granulated Sugar
    3 large Eggs
    1/2 cup Lemon Juice
    1 cup Plain yogurt (I used nonfat)
    3 tbsp Lemon zest
    1/2 cup Poppy seeds

Directions

1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9x5 inch loaf pans.
2. Sift together flour, baking soda, and salt. Set aside.
3. In a large bowl, cream butter or margarine, and sugar until light and fluffy. Beat in eggs, one at a time.
4. Mix lemon juice and yogurt together.
5. Add alternately the lemon-yogurt mixture and the sifted flour mixture to the butter mixture. Mix until just blended.
6. Stir in lemon rind and poppy seeds.
7. Pour mixture into prepared pans and smooth tops.
8. Bake at 350 degrees F (175 degrees C) for 40 minutes or until browned on top and a knife inserted in the center comes out clean. Cool on rack for 15 minutes before turning out of pans.

Serving Size: Makes 24 servings: 2 loaves cut into 12 slices each
