Ingredients

    0.50 tsp Vanilla Extract
    0.50 tsp Baking Powder
    1 serving Ghiradelli Chocolate 60% Cacao Bittersweet Chocolate Chip, 16p
    30 gram(s) Bob's Red Mill - Organic High Fiber Coconut Flour (7g / Tbsp)
    2 large Egg, fresh, whole, raw
    .1 cup Oat Bran
    7 grams Coconut Oil
    2 medium (7" to 7-7/8" long) Banana, fresh

Directions

1. Preheat the oven to 350 degrees.
2. Throw everything together in a medium bowl and mix until combined.
3. Pour into a lightly greased (use coconut oil or butter for greasing) pan.
4. Bake for about 45 - 60 minutes or until center is set and top is golden.

Serving Size: makes 6 muffins
