These are perfectly moist with a crisp muffin top, the peanuts add nutrition and nice texture. My daughter loved these! Ingredients

    2 Medium bananas (mashed)
    3/4 cup sugar
    1 egg (slightly beaten)
    1/2 cup melted butter
    1 tsp vanilla
    1 cup lowfat or nonfat vanilla yogurt
    1 tsp baking soda
    1 tsp baking powder
    1/2 tsp salt
    1 tsp cinnamon
    1/4 cup unsalted peanuts (crushed)
    1 1/2 cups flour I do half whole wheat and half all purpose usually

    Blueberries fresh or frozen (thawed) are also delicious in this recipe, I'd omit the peanuts if I did blueberries. Use 1/4 cup berries.

Directions

Preheat oven to 375. Use foil liners. In a bowl, mash bananas, add sugar, egg, butter, vanilla and yogurt, mix until smooth. In a separate bowl mix flours, baking powder, baking soda, salt and cinnamon. Add dry ingredient to wet ingredients and mix until well blended. Stir in nuts. Bake for 20 minutes or until lightly brown and golden. Makes 12 muffins.
