Introduction

Ingredients

    16 ounces Chicken Breast (cooked), no skin, roasted
    .5 cup, chopped Onions, raw
    1 clove Garlic
    .33 tbsp Extra Virgin Olive Oil
    .25 cup Cut Leaf Spinach - Frozen
    .25 cup Ricotta Cheese, whole milk
    0.33 cup, shredded Mozzarella Cheese, whole milk

Directions

Pre-heat oven to 350
In a skillet heat to medium and saute the onions in the olive oil until softened. Place is a mixing bowl with the garlic, spinach, ricotta and 2 Tbsp of mozzarella. Mix and set aside.
Prepare the chicken breast by creating a pocket in the chicken breast. Lay the breast flat on the cutting board. Start in the center of the breast at about 1" from the top and make a slice going down til about 1" from the bottom. Make sure not to cut through the back end of the breast.
Portion the stuffing into the 4 chicken breasts, place in a casserole dish and top with the remaining mozzarella. cover and bake for 20 min. Remove the cover and bake for an additional 15 - 20 min until the mozzarella is lightly browned and the chicken is cooked thru (165 degrees internally). Remove the chicken and let rest for 5 min. Serve and enjoy.
