Introduction

You may know this drink as eggnog, but the German's call it Hoppel-Poppel, which is much more fun to say. :)

This is drink is open to variations. For a sweeter drink, add a little more sugar. For a drink that's lower in fat, use lowfat milk. For a richer, less sweet drink, substitute brandy for the rum.

Ingredients

    4 large Egg Yolk
    5 cup Milk Whole Vitamin D
    .5 cup Granulated Sugar
    8 fl oz Rum
    .1 tsp Cinnamon, ground
    .1 tsp Nutmeg, ground
    1.25 tsp Vanilla Extract
    .1 tsp Salt

Tips

Make sure and never boil the milk.


Directions

Heat up milk in a saucepan over medium-low heat. (Do not boil.)

Using a stand mixer or hand mixer, beat egg yolks and sugar until fully combined and foamy.

Add hot milk and vanilla extract to egg mixture in a small, steady stream, while beating constantly.

Stir rum into the mixture and add a pinch or two of salt.

Pour into mugs and top with cinnamon and nutmeg.


Serving Size: Makes 4-6 servings

    At our house, HOPPEL POPPEL is a way to use up left over meats and veggies. It must depend on the area of Germany. The left overs might be the yolks. - 12/28/15
