Introduction

This recipe is super easy and super flexible. You can use any brand of cake mix (spice and carrot cake are some favorites) and success has been reported with gluten free and reduced sugar mixes as well. Ingredients

    15.25 oz Pillsbury Moist Supreme Classic Yellow Cake Mix (whole box) (by MOMMACAKES)
    2 cup Libby's 100% pure canned pumpkin
    2 tsp Cinnamon, ground
    2 tbsp Chia Seed (Nutiva) 1 Tbsp
    1 oz Hawaiian Isles 100% Hawaiian Purified Water (by TUBBY0918)
    .5 tsp Nutmeg, ground
    .25 tsp Allspice
    1 tsp Vanilla Extract
    .5 cup, chopped Pecans

Directions

Combine chia seeds with water (just don't use tap water because the chia will pick up the taste of any impurities). Add vanilla and stir well. Set aside for about ten minutes, stirring occasionally. In a large mixing bowl, combine cake mix, spices and canned pumpkin. Fold in chia mixture. Batter will be very thick. If you think it is too thick, add a tablespoon or two of water. Fold in chopped pecans. Bake in well-greased muffin tins.
