These muffins use a combination of white and whole wheat flours for added nutrition. They are made without dairy or eggs (vegan). The recipe works best with a tart apple such as a Granny Smith. Ingredients

    1 cup flour
    3/4 cup whole wheat flour
    1/4 cup sugar
    1/2 tsp. salt
    2 tsp. baking powder
    1 tsp. cinnamon
    2/3 cup soy milk
    1/3 cup vegetable oil
    1/3 cup unsweetened applesauce
    1 large granny smith apple, peeled and chopped

Directions

Heat oven to 400°. Spray 12 cup muffin pan with nonstick spray.

Combine flour, sugar, salt, baking powder and cinnamon. Combine soy milk, vegetable oil, and applesauce. Gently mix wet ingredients into dry ingredients. Fold in chopped apples.

Drop into prepared muffin pans. Bake 20 to 25 minutes until muffins are golden brown on top. Makes 12 muffins. (Serving size is 1 muffin.)

Optional: Dip tops into cinnamon sugar while still hot. (Not included in nutritional info.)
