Introduction

A very tasty, easy, low calorie version of a Cajun favorite! A very tasty, easy, low calorie version of a Cajun favorite!
Number of Servings: 12

Ingredients

    1/2 pound turkey sausage, sliced
    1/2 pound frozen chicken breast
    1/2 pound frozen cooked shrimp
    1/2 bag Bird's Eye frozen Pepper Stir-Fry mix
    1 can diced tomatoes, with juice
    1 can low sodium chicken broth
    2 cups instant rice (white or brown)
    1 tbsp cajun or creole seasoning

Directions

1. Put the everything but the shrimp and rice into your slow cooker, and cook on LOW 7.5 hours (do NOT turn off the heat yet!).

2. After 7.5 hours, remove the chicken and cut into cubes. Add the frozen shrimp and instant rice and cook another 30 minutes or until the rice is done.

*Makes approx. 12 1-cup servings.

    Great recipe! I use more cajun seasoning and omit the chicken. I also make rice on the side versus in the crockpot to have more control over rice serving size. Also very good over whole wheat pasta! - 11/11/09

    This was very good! We judge if it's a keeper if my 5 year grandson likes then we put it in the keep book. He asked for 2nds! I added med onion, 1/2 bell pepper, used frozen vegs I had on hand, added red pepper flakes and hot sauce since I didn't have the seasonings. Turned out great! - 6/22/11
