Introduction

Easy make-ahead breakfast. Easy make-ahead breakfast.
Number of Servings: 6

Ingredients

    7 large Egg, fresh, whole, raw
    1/2 cup Spinach, cooked
    1 tsp Garlic
    1 cup, shredded Swiss Cheese
    5 medium slices, cooked (raw pro Bacon, pork, microwaved
    1 Tbsp Avocado Oil



Directions

Preheat oven to 350*, spray muffin tin with 0 calorie oil spray or line with cupcake papers. Scramble eggs, stir in the rest of the ingredients, spoon into muffin tin, filling 1/2-3/4 of the way.

Bake for 20 min or until just beginning to brown and no more bubbles are seen.

I refrigerate these and microwave them for 30 sec each morning for breakfast.

Serving Size: 2 Muffins

    Great recipe and flavours. I made a second batch by adding 4 more eggs, splitting the total, and adding a Roma tomato, half an onion, both diced and sauteed, and a small amount of cooked and crumbled sausage to the second batch. Thank you!! - 12/20/16
