Ingredients

    1 medium pear grated
    60g butter softened
    1/4 cup self raising flour
    3/4 cup plain flour
    1 teaspoon cinnamon
    1/2 cup firmly packed brown sugar
    1/4 cup maple flavoured syrup
    2 eggs
    1/3 cp coarsly chopped pecans
    1/3 cup finely chopped dried pear

Directions

preheat oven to 180 degrees celcius
squeeze juice out of grated pear, you need 2/3 cup. beat butter flours, cinnamon, sugar, syrup and eggs in small bowl with electric mixer on low speed until combined, then increase to medium speed and beat until pale in colour. stir in nuts and fresh and dried pear. Divide into cupcake cases and smooth surface. Bake for 30 minutes.
Can be made as a regular cake (bake for 35 minutes)
Makes 12 cupcakes
