Ingredients

    4 cups of raw apples, peeled and diced
    1 tbsp organic extra virgin coconut oil (or vegetable oil)
    1 tsp ground cinnamon
    1 extra large egg
    3 tbsp organic extra virgin oil (or vegetable oil)
    1 tsp ground cinnamon
    1 tbsp unsweetened orange juice concentrate
    3 tbsp unsweetened pineapple juice concentrate
    1/2 cup unsweetened apple juice concentrate
    1-1/2 cups Bob's Red Mill - Gluten Free All Purpose Baking Flour
    1-1/4 tsp baking soda

Directions

Preheat the oven to 350 degrees.

Lightly spray a glass 8 x 8 baking dish.

Peel and dice 4 cups of apples. (Any kind, but Gala apples work well.)

Melt 4 tablespoons of coconut oil in a small container in the microwave. Cool slightly and set aside.

In a large bowl, combine the apples, 1 tablespoon of melted coconut oil and 1 teaspoon of ground cinnamon.

Dump the prepared apples into the greased baking dish and spread evenly.

Using the same bowl, dump in the remainder of the melted oil and an extra large egg. Beat to combine.

Add in 1 teaspoon of cinnamon, 1 tablespoon of unsweetened orange juice concentrate, 3 tablespoons of unsweetened pineapple juice concentrate, and 1/2 cup of unsweetened apple juice concentrate. Mix well.

Add in 1-1/2 cups of gluten-free all purpose baking flour (or regular all purpose flour if preferred) Stir to combine.

Add in 1-1/4 teaspoons of baking soda. Stir to combine.

Spoon the batter on top of the prepared apples in the baking dish, spreading it to the side and corners to cover the apples.

Bake at 350 degrees F for 30 minutes. Test with a fork or cake tester to ensure it is baked. If not, lower the temperature to 325 degrees F and bake another 5 minutes.

Cool in the baking dish on a wire rack for 20 minutes. Then place an inverted serving plate over the baking dish and flip to remove the cake.

Cut into 9 equal servings. Good warm or cold.
