Ingredients

    1 tsp Butter, unsalted
    1/4 cup, chopped Onions, raw
    1 cup, pieces or slices Mushrooms, fresh
    1 clove garlic minced
    2.5 oz Beef chuck, arm pot roast (or chicken, or any meat)
    1/4 cup, chopped Carrots, raw
    1 1/2 TBSP Better Than Bouillion - Vegetable
    1 tsp Kikkoman Low Sodium Soy Sauce
    4 cup (8 fl oz) Water, tap
    1/2 head Baby Bok Choy

Directions

Separate leaves from the bok choy stems; tear leaves into small-medium pieces. Chop bok choy stems into small pieces. Melt butter in saucepan. Saute onions, carrots, and bok choy stems until softened. Add garlic and mushrooms until mushrooms are slightly cooked. Stir Better than Bouillion into 4 cups boiling water. Pour water into saucepan. Add low sodium soy sauce and bok choy leaves, and simmer for a few minutes until leaves are softened.
