Introduction

This is a light salad with a twist. Served on a bed of raw spinach, slices of tomato, bell pepper, and cucumber and you've got a tasty summer dish. Ingredients

    4 tbsp Dressing, Bolthouse Farms Cilantro Avocado Yogurt
    8 serving Mayonnaise, Light, Great Value, 1 tbsp
    1.5 cup Louis Kemp, Crab Delights-imitation crab
    1 stalk, large (11"-12" long) Celery, raw
    .5 medium (2-1/2" dia) Onions, raw

Directions

Dice the onion and celery and place in a bowl. Finely chop the imitation crab and mix in with the celery and onion. Add the light mayonnaise and the yogurt dressing and mix well. Season as desired. Chill for half an hour. Makes 3 1 cup servings. Serve on a bed of raw spinach with slices of tomato, bell pepper, and cucumber.
