Ingredients
-
4.5 tsp Yeast, bakers (2 pkts)
1/2 cup Granulated Sugar
1/2 Cup Shortening, Crisco
1/2 cup Milk, nonfat (skim milk)
2 tsp Salt
4.5 - 5 cup Flour, white ( nutrition based on 4.5 c)
3 large Egg, fresh, whole, raw
Tips
You can easily split the recipe in half after the resting stage. Roll out one half and cover with butter, brown sugar and cinnamon for cinnamon rolls. You can also make your rolls much smaller and have more. This recipe easily fills two 13x9 pans. Prep time is active prep, not rising time. I start in the morning with this recipe and have it done by dinner. I allow mine to do the rising in my oven with the light on for some warmth.
Directions
Add yeast to 1/3 cup off warm water (110 degrees). In a saucepan combine sugar, shortening, milk, and salt. Heat, stirring til sugar dissolves. Place in a large bowl. Cool to lukewarm. Stir in 1 1/2 cup flout, beat well. Add yeast and eggs, beat thoroughly til smooth. Stir in enough remaining flour to form a moderately stiff dough. Knead on lightly floured surface until smooth and elastic. Shape into a ball. Place in a lightly greased bowl ( I use the same bowl that I mixed in and just spread some olive oil in it), turning once. Cover, let rise until doubled (about 1-1 1/2 hours). Punch dough down, turn out onto a lightly floured surface. Cover and let rest for 10 minutes. Shape dough into rolls, place in greased pan, cover and let rise in a warm place until doubled (1-2 hours). Bake at 400 until done, 10-12 minutes. Remove from pan when cool
