Ingredients

    1/3 c. olive oil
    2 garlic cloves, minced
    2 tsp. dried rosemary leaves, crushed
    2 tsp. dried thyme leaves, crushed
    1/2 tsp. salt
    1/4 tsp. pepper
    2 whole pork tenderloins (3/4 to 1 lb. each)
    2 1/2 lbs. new potatoes, quartered

Directions

Heat oven to 375 degrees. Stir oil, garlic and seasonings; coat meat with 3 tablespoons of seasoning mixture. Place in large roasting pan. Toss potatoes with remaining seasoning mixture; arrange around meat in pan.
Roast 35 to 40 minutes or until meat thermometer registers 155 degrees and juices run clear, stirring potatoes after 20 minutes. Broil on top rack of oven 5 minutes to brown. Let stand 5 minutes before slicing. Serves 8.

    Was very tasty. I added 1/2 tsp of basil, 1/2 tsp of Summer savory, 1 medium onion chopped and 2 cups of celery cut in 1 inch pcs. It was voted to be on the list of...To make again. - 9/19/08

    Incredible!
    Just made 1/2 recipe for hubby and me. Easy prep and delicious. I used red-skin potatoes and Pennsylvania Blend Vegies. Everything got done perfectly in toaster oven. Plenty of leftovers for another day. - 4/14/14

    Made this recipe last night & hubby loved it. It was easy and didn't take long. Served with roasted broccoli, carrots, cauliflour & cob corn. Cooked two tenderloins; saved leftovers & the other one for easy peasy meals later this week. :) - 6/27/12

    Very Good
    Made a half batch and included an onion in the mix... good dish with little in the way of preparation to worry about. I did have to increase the cooking time - after 45 minutes the potatoes and pork still had a way to go. - 6/30/10
