Ingredients

    1¼ pounds peeled and deveined
    shrimp (sub 1 pound chicken
    tenders, cut into pieces)
    ¼ teaspoon sea salt
    ¼ teaspoon black pepper
    1 teaspoon cumin
    2 Tablespoons coconut oil
    1 small yellow onion, diced (1 cup)
    2 garlic cloves, minced
    1 pound pork sausage (can sub
    turkey or beef sausage)
    2 large zucchini, diced (4 cups)
    3 Tablespoons lime juice (2 limes)
    ¼ cup chopped cilantro (¼ bunch)
    ¼ teaspoon cayenne (optional)

Directions

1. Toss shrimp with salt, pepper, and cumin.
2. Heat a large non-stick skillet over medium high heat and add coconut oil.
3. When oil is hot, add onions, garlic, and sausage. When sausage is cooked through, add shrimp and cook for 1-2 minutes per side until pink and opaque.
4. Turn heat to low and add zucchini, lime juice, cilantro, and cayenne. Serve with broccoli.

Serving Size: Makes 4 3/4-1 cup servings
