Phase 1So my family are big Chicken & Waffle fans – and I’ve have not made them any since I started this plan… so I thought I’d ‘try’ and experiment which will allow ‘me’ to enjoy this dish along with them.Serving Size – 1 Waffle and ‘ample’ Chicken (Note: Due to use of Lite Baby Bell & Carbquick this will also count as a ‘snack’ – My hope is that once split over 6 waffles and 4 chicken breasts this uses approx. 1g Carb)
Nutritional info was calculated using 1/4 tsp. of Half Salt, 1 cup of carbquik and 1/2 cup unsweetened almond milk.
Makes 6 servings of 1 waffle and about 3 oz. chicken.

Savory Waffles
Ingredients
• ¼ Section of Large Head of Cauliflower – Pulsed to ‘rice’ consistency (Should equal approx. 2 cups)
• 3 Green Onions – Chopped
• 1 Garlic Clove – Minced (My first batch I used 3 and it was too strong, I don’t know what I was thinking! – So I’m ‘guessing’ that 1 may work – but you might have to adjust this to person preference)
• 1 Whole Egg and 1 Egg White – See note below in ‘Directions’ regarding adjustment to quantity
• 4 Lite Baby Bells – ‘Finely’ shredded
• Pam – As required
"Fried" Chicken
4 chicken breasts
1 cup carbquik powder
1/4 tsp Half Salt
black pepper
onion powder
garlic powder
red chili powder
2 tsp paprika
1 tsp oregano
1/2 cup unsweetened almond milk
canola oil
Directions
Savory Waffles
1. While putting together ingredients start/heat your waffle iron – needs to be nice an HOT
2. Combine the above in a large bowl (Note: As this was my 1st attempt I found this a little ‘loose/wet’ so I simply tipped the bowl and allowed excess to pool – next time I think I may try this with just 1 whole egg
3. Spray/spritz Waffle iron with Pam and place approx. ½ cup of mixture in iron
4. Close lid and bake for approx. 4-6 minutes (Note: Time will differ from iron to iron – so you’ll have to find what works best for you – the key here is to NOT PEEK until at least 4 minutes has passed… you’ll be tempted, but don’t do it!)
5. Gently remove waffle and repeat until 6 waffles are done (Note: You have to be ‘gentle’ with these – they are delicate… however if you take a few moments to loosen around edges they will lift off in one whole piece)
"Fried" Chicken
1. Mixed Hina’s ingredients plus paprika and poured into a Zip Lock bag
2. Soaked 4 Chicken Breast – 30 minutes in milk bath
3. 2 9x13 glass casserole dish coated with approx. 1 tbl of Oil – place in 400 degree oven to get oil/dish ‘hot’
4. Remove piece of chicken from milk bath, shake gently to remove excess milk and place in Zip Lock bag – shake to coat (Repeat till all chicken is coated)
5. Carefully remove hot casserole dishes and place chicken on dish (Note: You need to leave ‘room’ around the chicken so that it bakes and not roasts/sweats – this is how you get ‘crisp’ without actually frying.)
6. Bake at 400 for 15 minutes – turn and bake for additional 15 minutes – let chicken ‘rest’ for approx. 10 minutes
7. During ‘rest’ time place Waffles on parchment paper lined cookie sheet and broil to re-heat – approx. 2 minutes.
