Introduction
This is adapted from the banana bread recipe featured at simplyrecipes.com. I have made it healthier and lower in calories by adapting traditional ingredients. I also add options for additions. Ingredients

3-4 medium very ripe bananas (7" to 7-7/8" long)--I always use four
1/3 cup Land O Lakes Fresh Buttery Spread, melted
24 packets of Great Value No Calorie Stevia (equals 1 cup of sugar)
1/4 cup Egg Beaters, Original
1 tsp Trader Joe's Pure Bourbon Vanilla Extract
1 tsp Great Value Baking Soda
a pinch of kosher salt
1 1/2 cups Gold Medal White Whole Wheat Flour
1/3 cup cranberries, dried, sweetened (optional, may also use chocolate chips, walnut pieces or raisins)
Directions
Preheat the oven to 350°F and spray 4x8-inch loaf pan with an oil-flour spray, such as Baker's Joy.
In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir the melted butter into the mashed bananas.
Mix in the baking soda and kosher salt. Stir in the Stevia packets, liquid cholesterol- free egg, and vanilla extract. Mix in the flour. Next, mix in the dried cranberries or other optional add-in if so desired. Nutrition calculations include the dried cranberries.
Pour the batter into your prepared loaf pan. Bake for 1 hour to 1 hour 10 minutes (check at 50 minutes--I have a hot oven and mine is finished then) at 350°F, or until a tester inserted into the center comes out clean.
Remove from oven and cool completely on a rack. Remove the banana bread from the pan. Slice and serve. (A bread knife helps to make slices that aren't crumbly.)
