Introduction
This no-crust pie satisfies my longing for dessert--sweet, creamy, delicious. If you can't do without crust, you can add one, but it will no longer be low calorie. Ingredients

1 tsp Cinnamon, ground
1/2 tsp Salt
1/2 tsp Ginger, ground
1/4 tsp Nutmeg, ground
1/4 tsp Cloves, ground
1 tsp Vanilla Extract, optional
1/2 tsp. liquid stevia extract (I use Sweetleaf SteviaClear)
2 large Eggs
15 oz can 100% pure canned pumpkin
6 oz Almond Milk, Unsweetened
Directions
Preheat oven to 350. Lightly oil a pie dish/plate/pan.
Measure spices and salt into mixing bowl; whisk together. Add vanilla, stevia, and eggs; whisk together. Add pumpkin and whisk thoroughly. Add almond milk gradually and whisk thoroughly. (I add it in two parts.) Pour into pie dish and bake for 45 minutes or until a knife inserted in the center comes out clean. Let cool at room temperature, then store covered in refrigerator until ready to eat.
