Introduction

This is a great salad full of veggies and flavor. I divide the salad into smaller portions as a side salad but sometimes I eat it as a dinner salad and add chopped chicken breast to round out the meal. Ingredients

    For salad:

    5 leaves romaine lettuce, chopped
    0.5 tomato, chopped
    0.2 cucumber, chopped
    0.3 cup green bell pepper, chopped
    0.25 cup chopped walnuts
    0.1 cup sunflower seeds, without shell
    1 tbsp chopped cilantro

    For dressing:

    0.75 slice cranberry sauce, canned
    1 tsp olive oil
    1 tsp vinegar
    dash black pepper
    dash salt

Directions

Chop the lettuce, tomato, cucumber, green pepper, and cilantro and combine in a medium sized bowl. Add the walnuts and sunflower seeds. Set aside. In a smaller bowl, combine the cranberry dressing, olive oil, vinegar, salt, and pepper. Whisk until combined. The dressing will be chunky and thick. Add the dressing to the salad and combine until the salad is coated with the dressing.

Makes 4 0.75-cup servings.
