Ingredients

    3 cups cubed peeled cooked potatoes
    3 hard-boiled eggs
    3/4 cup diced celery
    1/4 cup chopped onion

    3/4 cup Miracle whip light
    1 1/2 tsp cider vinegar (or 1 tsp white vinegar)
    2 tsp yellow mustard
    1/2 tsp sugar
    1/4 tsp salt
    1/4 tsp pepper

    Paprika, if desired

Directions

Combine potatoes, 2 of the hard-boiled eggs (chopped), celery, and onions in a large bowl. In a small bowl, mix all remaining ingredients (except paprika & last egg), blend well. Spoon dressing over salad; mix well. Slice remaining egg for garnish, sprinkle with paprika if desired. Cover, refrigerate at least one hour or until well-chilled.

Makes 8 1/2-cup servings
