Ingredients

    27 tbsp Egg Beaters All Natural Egg Whites-Southwestern Style
    .75 cup Great Value Finely Shredded Fiesta Blend Cheese
    2 cup Baby Spinach (raw)
    1 small Onions, raw

Directions

Saute onions, and chopped baby spinach. In large mixing bowl add egg beaters, cheese (reserve 1/4c. for topping), onions and spinach. Mix well. Spoon 1/4 c of the mix in each muffin cup. Bake on 350 until slightly browned. Add the rest of the shredded cheese and bake for about 4 additional minutes or until cheese is melted.
