Ingredients

    8 oz Lean Ground Sirloin 10% Fat
    .5c serving Brown rice
    2 tbsp Egg substitute, liquid (Egg Beaters)
    .5 tsp Salt
    .25 tsp Pepper, black
    .25 medium (approx 2-3/4" long, 2- Sweet peppers (bell)
    2 slice, large (1/4" thick) Onions, raw
    1 clove Garlic
    2 tsp Parsley, dried
    .25 tbsp Marjoram, dried
    1 can Canned Tomatoes

Tips

Add additional salt, pepper and herbs to taste.


Directions

Combine sirloin, rice, eggs sub., .25 t salt, pepper and parsley until mixed. Form into 12 meatballs. Lightly brown in non-stick skillet. Remove from pan and set aside. They do not need to be fully cooked. saute/steam peppers, onion and garlic 3-4 minutes. Return meatballs to pan and add tomatoes. remaining salt and marjoram. Cover and simmer until juice is reduced and vegetables are tender.

Serving Size: 2 (6 meatballs and half the veg.)
