Introduction

Traditional old European Recipe, often made for Easter Breakfast to go with sweet breads. There is a special ceramic form to use for it, but a simple strainer and/or some cheese cloth work fine as well. Ingredients

    8 large Egg, fresh, whole, raw
    3 cup Milk, 3.25%
    1/2 tsp salt
    2 tsp sugar

Directions

Mix all ingredients together with a handmixer on low speed only until well blended. Heat in a double boiler, careful not to have water splash into the egg mixture. Stir occasionally, scraping the bottom. The cooking process is finished when solid pieces have separated from whey (remaining liquid looking watery). Pour into an egg cheese form or alternatively into a fine strainer or colander lined with cheese cloth. Suspend over a bowl and refrigerate for several hours or overnight. Slice into 12 servings.
