Introduction

Low carb, very tasty and very easy to make!! I have had WLS so use chicken thighs because they are so moist but chicken breast can be used. It is up to you as to whether you remove the skin and/or the bone but this will affect the nutritional info. Low carb, very tasty and very easy to make!! Ingredients

    1/2 cup Smuckers sugar free marmalade
    1/2 cup regular BBQ sauce
    1 tbsp soy sauce
    2 pounds skinless, boneless chicken thighs

Directions

Microwave marmalade and soy sauce together and blend. Stir in BBQ sauce.

Place chicken in large saucepan. Pour sauce over chicken. Cover and simmer on low for 1-1/2 hours. Remove cover and let simmer for 1/2 hour more to reduce sauce. It becomes quite thick without using any having to use any flour or cornstarch.

This can be baked in the oven for 1-1/2 hours. If you leave it uncovered, the sauce will carmalize on the chicken pieces.

It can also be cooked in a slow cooker. The sauce will be quite thin. If you wish you can pour the sauce into a small saucepan and reduce the liquid by simmering it, uncovered, for 1/2 hour.

Serve over rice or even mashed potatoes.

    Incredible!
    I made this in my crockpot & it turned out well. The meat was so juicy it practucally shredded itself, lol. I had planned to serve it with tortillas, but it was so good on its own, I just ate it striaght from the pot =P - 6/15/10

    I made this without simmering the sauce - just adding it like a marinade the night before, then pouring over as I baked the chicken in the oven. YUM YUM YUM! - 3/17/09

    O.K.
    Tasty, but on stovetop I would probably cook for 1.5 hr TOTAL as I found the chicken slightly overdone (although I did use breasts so maybe that made the difference). However, made lots of sauce for over veggies and rice so the hubby liked it. - 9/5/08

    Very Good
    I used a frozen raw bbq chicken breast and added the other ingredients. Very moist and wonderful! - 6/8/08
