Ingredients

2 cup, cubes Sweet potato
1 tbsp Butter, salted
1/8 tsp packed Brown Sugar
2 tbsp Olive Oil
.5 cup Parsley
.25 cup, packed Raisins
2 tbsp Pine Nuts
2 tsp Lemon Juice 'Real Lemon' 100% juice
1 tsp (C) Vinegar, Red Wine (Gr Value)
.5 head, medium (about 5" dia) Cabbage, red, fresh
2 clove Garlic
Directions
Combine sweet potato, butter, brown sugar and 1 1/2 cups of water in small saucepan. Season with salt and pepper. Bring to a boil, simmer 12 minutes or until potatoes are tender and most of the water has evaporated
Add 1Tbsp oil, parsley, raisins, pine nuts, lemon juice and vinegar, and cook until all remaining liquid has evaporated (3-4 mins)
Heat remaining tbsp. oil in large skillet over high heat. Add cabbage and garlic, season with salt and pepper. Cook five minutes, or until cabbage wilts, stirring often. Remove garlic. Transfer cabbage to servicing bowl, top with sweet potato.
