Introduction

Number of Servings: 4

Ingredients

    1 Zucchini
    1 Yellow Squash
    1 Green pepper
    1 Red pepper
    1 onion
    1 cup petite baby carrots
    1 lb. eye of round beef steak, cubed
    2 cups white rice, long grain
    1 tbsp. extra virgin olive oil
    1/4 cup white cooking wine
    parsley and pepper to taste

Directions

Brown cubed beef until slightly pink. Add olive oil, onion, and carrots. Cook for 5 mins on medium heat. Add zucchini, squash, red and green peppers, parsley, pepper, and wine. Cook on medium heat until veggies are tender. (about 20 mins.) While they are cooking, cook rice according to package instructions in a different pan.

Place 1/2 c. rice in bowl and 1/4 of the veggie-beef mixture, and EAT! :D

    I made this today. It was very good. The idea, that is. I had something sour in mine. Couldn't figure what. Maybe the broccoli that I added. Washed off the sauce and then it was good. Wet, but good. - 8/12/08
