Introduction

Ingredients

    12 ounces of cooked skinless, boneless chicken breast- chopped or shredded

    4 TB of mayonnaise made with olive oil or light

    1 cup cucumber, with peel, chopped

    1 cup tomato, chopped

    1 TB onion

    salt, pepper, dill, or seasoning of preference

Directions

It's simple! Mix all the ingredients.

I like to add dill or "Over the Edge Spinach Seasoning" from Two Sisters Gourmet. I add a bit of mustard also. Many different seasonings will work well, so tweak it to your own taste!

I put this in a pita, on crackers, bread, or on a bed of greens.
