Ingredients

    1 cup (1" pieces) Cauliflower, cooked
    6 1tsp Olive Oil
    1 cup, chopped Peppers, sweet, red, fresh
    3 cup (8 fl oz) Water, tap
    .5 cup, chopped Onions, raw
    2 clove Garlic
    1 dash Salt
    1 dash Pepper, black
    2 tsp Curry powder

Directions

Clean and cut the cauliflower, spray with a little cooking spray, sprinkle with curry powder and roast in the oven (broiler). In a pot, sauté oil, garlic and onions. Add water and cauliflower to pot, salt and pepper to taste, and simmer. When complete, put into blender to make it creamy. Chop red pepper and add for texture, color and taste.
