Ingredients

    1/2 c. Coconut flour
    1/2 c. Almond Flour
    1c. Swerve or trivia sweeter
    1/4 c. Coconut oil or Butter, unsalted
    5.0 large Eggs
    1/2 c. Lemon or lime juice
    1/2 unsweetened shredded/dedicated Coconut
    Optional zest of lemon or lime and
    Optional 1/2 lemon or lime extract

Directions

1. Preheat oven to 350. 2. Line an 8x8 baking dish or similar size pan with parchment paper. 3. Whisk the coconut flour, almond flour, and 1/4 ONLY of sweetener, reserve the rest 4. Cut the butter or oil into the flour mixture, or use a food processor on pulse until combined 5. Press the mixture onto parchment paper and bake for 10 minutes. 6. While that's cooking, beat the eggs, lime juice, zest, and remaining 3/4 c. Sweetener. If using a food processor for crusted, simply put these in it and pulse until combined. Only takes 2-3 pulses and you'll dirty one less bowl. 7. Pour egg mixture onto crust after it's done and sprinkle with optional coconut. 8. Bake for 15-25 minutes, checking every few after 15 due to variations in pans used. 9. Allow too cool for at least 30 minutes before lifting out with parchment paper and cutting.

    Very Good
    The recipe is simple and the flavor is okay. I was hoping it would be a little thicker. It's a pretty flat desert. Perhaps I needed to mix the eggs longer but it doesn't really state that well. - 6/18/18
