Introduction

We really love traditional corn pie, but between the carbs in the pie crust and the corn, it no longer "fits" into a healthy eating plan. I like the Impossible Pies (both sweet and savory) and decided to experiment with the left-over corn and grilled chicken from dinner. Ingredients

    0.5 cup Bisquick baking mix
    2 large Egg, fresh, whole, raw
    2 cup Milk, 1%
    6 tsp Granulated Sugar
    3.5 ear, medium (6-3/4" to 7-1/2" Sweet Corn, Fresh
    3 ounces Chicken Breast (cooked), no skin, roasted
    1.5 pat (1" sq, 1/3" high) Butter, salted

Directions

If corn is not cooked, steam in microwave first, then remove corn from cobs. Spray a 10" pie pan or a torte pan with cooking spray. Put corn kernels and chopped chicken in bottom of pan, season with salt and pepper. Combine eggs, sugar, milk and baking mix in blender jar and blend until smooth. Pour liquid over corn and chicken, dot with small amt of butter. Bake at 350 degrees for about 35 minutes or until custard is set.
