Introduction

Ingredients

    2.0 medium (4-1/8" long) Scallions, raw
    1.5 cup (1" pieces) Cauliflower, cooked-bag of the frozen from kroger is what I use
    2.0 can Tuna, Canned in Water, drained
    2.0 large Egg, fresh, whole, raw
    1.0 tsp Lemon Juice 'Real Lemon' 100% juice
    4.0 oz Parmesan Cheese, grated
    0.5 pepper Jalapeno Peppers

    Seasonings: salt, pepper, cayenne, garlic, paprika, cumin, coriander, ginger, etc

Directions

Microwave the Cauliflower, then blend it in your food processor until it has a paste like consistency. Drain the canned of tuna and dice the jalapeno and scallions Add eggs to a bowl and mix, then add the tuna and cauliflower. Add seasonings Add cheese Add scallions and jalapeno Mix all until well combined Preheat oven to 350. Butter all 12 hollows in the cupcake pan. Divide mixture evenly into all 12 hollows. Bake for 25 minutes.
