Introduction

Ingredients

    3 large Egg, fresh, whole, raw
    4 serving Matzo - Yehuda Matzo
    1 cup Milk, 2%, with added nonfat milk solids, without added vit A
    3 tbsp Butter, salted

Directions

In large bowl, lightly beat eggs and milk together until combined. Crumble matzos into egg/milk mixture and thoroughly mix/coat matzos. Let soak 20 minutes.

In large skillet, melt butter over medium-high heat until just starting to sizzle. Pour in matzo mixture, spread evenly, and allow to cook until edges set up, about 5 minutes. With spatula, break up matzo mixture and continue to cook, folding and stirring, as you would scramble eggs, an additional 5 minutes or until eggs are cooked to your taste.
