Ingredients

    1/4 Large Onion, Chopped
    2 cloves Garlic, minced
    2 tbsp Basil, minced
    1 1/2 C Spinach, chopped
    1 1/2 tbsp Olive Oil
    4 large eggs, beaten
    1 1/2 oz Feta Cheese

Directions

Preheat oven to 350. In a medium skillet heat the olive oil. Add the chopped onion, garlic and basil. When the onion starts to soften add the chopped spinach. Saute until the spinach has wilted and the water is cooked out. Add the beaten eggs. Cook on the stove top until the eggs start to thicken. Add the feta and mix well. Place in the oven for about 10 minutes oe until eggs are set. Occasionally you may have to finish the top off under the broiler.

    Very Good
    Made 1/3 recipe as I had 1/2 an egg. Very nice. Easy and quick. Used basil in tube which has a bit of canola oil (2 g.), but it splattered a lot. The whole combo is really nice. - 11/10/11
