Introduction

I pretty much just made this up on the fly and it turned out great! An interesting twist on ground chicken that is super filling. Eat it plain, with rice, taco shells, with a salad.... Ingredients

    20 oz Turkey, Ground turkey, 93% lean (one package)
    1 small onion
    2 cloves garlic
    1 med. green bell pepper
    1/2 can (15.5 oz) black beans drained
    1 can of diced tomatoes (14.5 oz)
    Taco Seasoning Mix-up to one package depending on taste
    2 tsp Adobo (optional...i just love adobo!)

Directions

*Coat pan with spray oil
*Sautee onion and garlic until brown
*Add chicken and completely cook. When there is no more pink, remove from pan and drain grease.
*Re-coat pan with spray oil
*Sautee green peppers 1-3 minutes
*Add diced tomatoes and beans and stir
*Put chicken back in pan and add taco mix and adobo, mixing well
*Simmer for 10-15 minutes

Serve alone or with rice-add low fat shredded cheese if desired.
