Ingredients

1 cup, whole Almonds
1 cup, pitted, chopped Dates
8 tbsp Shredded Coconut Unsweetened (Bob's Red Mill)
1 tbsp Maple Syrup
2 tbsp Lemon juice
0.5 tsp Vanilla Extract
0.5 tsp Salt
Directions
Pulverize almonds in food processor until crumbly. Add dates, and other ingredients. Process until combined.
Scoop out mixture with a spoon and with slightly wet hands, shape into 1" balls. I wear gloves and just use my hands.
Place on baking sheet and refrigerate at least one hour before eating. They keep well in a bag in the freezer.
You can roll them in coconut if you like but I do not. They're great as-is!
