Introduction

It's amazing what you can do with a box of brownie mix! They're "magic" because the beans add extra fiber and protein, and enable you to eliminate the eggs and oil from the recipe. I added the walnuts for an added zing of Omega 3 fats. It's amazing what you can do with a box of brownie mix! Ingredients

    20 serving Pillsbury Family Size Chocolate Fudge Brownie Mix (Mix only)
    130 gram(s) Aunt Penny's Organic Black Beans (drained and rinsed)
    0.05 cup, chopped Walnuts (chopped) Optional
    8 tbsp Hershey’s Special Dark Chocolate Chips
    8 tbsp Peanut Butter Baking Chips
    1 cup Black Coffee

Directions

Drain and rinse well 1 can of black beans. Combine beans with 1 cup cold coffee in food processor and process until smooth. Pour into mixing bowl, add dry brown mix, 1/2 c chopped walnuts, 1/4 cup semi-sweet chocolate chips, 1/4 c peanut butter baking chips. Combine well. Pour into 9x13" lightly greased baking pan, sprinkle remaining 1/4 c chocolate chips and 1/4 c peanut butter chips. Bake at 350 degrees F for 25-27 minutes. Cool completely before cutting.
