Ingredients

    500 gram(s) Split Red Lentils
    400 gram(s) Tinned Tomatoes, Wattie's, Indian Style (NZ)
    1 large Onions, chopped
    1 large Carrot, chopped
    0.5 cup Spinach, chopped
    1 tbsp Curry powder
    Water or stock (calories for stock not included)
    Salt & pepper

Tips

Add more vegetables if you wish - this will affect the calorie count.


Directions

Place all ingredients in saucepan adding enough water or stock to make up to 2 ½ litres. Bring to boil. Simmer until cooked (an hour or so). Keep a careful watch, adding more water and stirring regularly as tends to stick to bottom of pan. Season to taste.

Serving Size: 1 cup
