Ingredients

    Brine:
    2 quarts water to 1 cup salt, soak for 1 hour.

    Cornish Hen Ingredients:
    1 packet Hidden Valley Original Ranch Salad Dressing & Seasoning Mix
    6 pat (1" sq, 1/3" high) Butter, unsalted
    1 cup Swanson Chicken Broth 99% Fat Free
    Black Pepper to taste
    2 bird whole Chicken, Cornish hens

Directions

Create brine in a deep bowl by mixing 2 quarts of water with 1 cup of salt. Submerge hens in brine, place in fridge, and allow to soak for 1 hour. Brine helps the hens retain moisture while cooking in the crock pot.

Meanwhile, remove 6 pats of butter from fridge and allow to soften to room temperature.

After, remove birds from brine, rinse under cool water and then pat dry. In a small bowl, mix 1 packet of Hidden Valley Original Ranch Salad Dressing and Seasoning with 2 tablespoons of softened butter. Set aside. Coat the birds in one tablespoon of butter each (total of 2 tablespoons). The remaining 2 tablespoons of butter should be divided evenly and placed inside the hens. Use the Ranch Butter and coat the outside of the hens a second time. Sprinkle with desired amount of black pepper.

Pour 1 cup of Swanson Chicken Broth (or whichever brand you prefer) into the crock pot. Place prepared hens in the crock pot and cook on HIGH for 4 hours.

Remove and serve with your favorite side dish (I did scalloped potatoes and steamed veggies).
