Ingredients

2 large eggs
1/4 cup of fat free milk
1/4 teaspoon of cream of tarter
1/2 cup finely chopped and peeled asparagus stems
1 teaspoon of parsley
1tablespoon of olive oil
Directions
Peel the lower sections of the asparagus spear. Dice fine. Set aside
Mix eggs, milk and cream of tarter well. Set aside
Spray pan with the pan coating spray. PLace over medium heat. Add the olive oil. Add the asparagus cook and stir often, until it is tender. Add the parsley and mix well.
Add the egg mixture and allow it to cook until the bottom is firm. Gently turn the egg mixture over Add the cheese. Fold the omlet in half . Browning each half lightly or until egg is firm.
