Ingredients

Crepe:
1/4 C Egg Beaters egg substitute
2 Tbs. 2% Milk
1 1/2 tsp. All-Purpose White Flour
1 tsp chopped Basil
1 tsp. chopped Parsley
1/8 tsp. salt
pepper
Filling:
1 Plum tomato seeded and julienned
1/4 cup rinsed drained and chopped canned artichoke
3/4 oz. Mozzerella cheese shredded
Directions
1. Spray 9" glass pie plate with non-stick cooking spray. In medium bowl whisk egg sub, milk, flour, basil, parsley salt and pepper until blended. Pour mixture into prepared pie plate, tilting to spread evenly. Cover tightly with plastic wrap; slit plastic wrap in center. Microwave on High 1 min 30 seconds to 2 minutes until set.
2. Spread filling ingredients on one side of crepe. Roll crepe in pie plate to enclose. Microwave on High 30-60 seconds or until cheese melts. With spatula, slide crepe onto plate.
Serving Size: Makes one serving
