Ingredients

    2 c Cream
    1.5 cup Chicken Broth
    2 lbs Carrots, peeled and Chopped
    3 Granny smith apples,peeled and chopped
    1.large sweet Onions, chopped
    1 tsp cracked black pepper
    3 sprigs fresh thyme
    1 1/4 c Apple Cider
    1 teaspoon kosher salt

Tips

use fat free evap milk and 98 % fat free broth for reduced calorie.


Directions

Place all ingredients in Dutch oven. Bring to boil, then reduce to simmer. Simmer 50-60 minutes until all carrots are tender. Remove thyme sprigs. Puree and serve immediately.
