Ingredients

    1 C Dried Cherries
    1 Small Granny Smith Apple
    2 Tbs Curry Powder
    2 Tbs brown sugar
    1 tsp Alspice
    1 tsp Ground Ginger
    1 tsp Ground Nutmeg
    1 Tbs Extra Virgin Light Olive Oil
    1/2 C Water
    1/4 C Corn Starch

Directions

Core the apple then dice the apple in 1/4 inch dice. In a medium (2 qt) saute pan, heat the olive oil. Toss apples and cherries till the apples just begin to soften. Add the curry powder, alspice, ground ginger, nutmeg and 1/3cup of the water. Cover and allow to simmer until the cherries have plumped up; Make a slurry of the remaining water and the corn starch and drizzle slowly into the apple and cherry mixture, stirring constantly, until the mixture thickens. Add in the brown sugar and allow to cook over medium low heat until it reaches a syrupy consistency.

Serve as a relish over roast meats.
