5 medium (2-1/4" to 3-1/4" dia.) Potato, raw
1 large Onions, raw
4 stalk, large (11"-12" long) Celery, raw
8 cup Swanson Chicken Fat Free Chicken Broth Less Sodium
1 cup Safeway 15-Bean Soup Mix (dry)
2 serving Barley Quaker Quick Pearled 1/3 cup (by FLORIDAGHOST)
4 cup Swanson Unsalted Cooking Stock Chicken (1 cup) (by KADUFRESNE)
3 sweetpotato, 5" long Sweet potato
6 cup, chopped Carrots, raw
Tips
cut all veggies and chicken in equal sized pieces.
be sure to soak dry beans mix prior to use
simmer stock over low heat. add freshly ground pepper and no salt added seasoning
Directions
soak dry beans in water for 4 to 8 hours or overnight
add to stock pot all diced vegatables and chicken in rich low fat unsalted chicken stock. simmer for 1 hour on low . drain and rinse soaked dry beans and quick barley to the pot and continue to simmer for another hour. turn off heat and cover and let stand to complete cooking.
