Ingredients

    1 (16 ounce) package penne pasta
    1/2 pound lean turkey or ground beef (higher fat and calories for ground beef)
    1 teaspoon diced onion
    1 teaspoon salt
    1/4 teaspoon ground black pepper
    1 (28 ounce) jar spaghetti sauce
    3 cups shredded mozzarella cheese

Directions

1. In a large pot cook rotini pasta in boiling salted water until al dente. Drain.

2. Cook ground turkey or beef in medium skillet until brown. Add the diced onion, salt and pepper. Mix in half of the jar of spaghetti sauce.

3. In a large bowl add the browned beef mixture to the drained pasta and stir in the second half of the of spaghetti sauce. Pour mixture into a 2 quart baking dish. Cover with aluminum foil.

4. In a preheated 425 degree F (230 degree C) oven bake for 20 minutes. Remove foil, sprinkle shredded mozzarella cheese and return to oven for 5 to 10 minutes. Serve warm.

    You can also cook these in individual ramekins and use your broiler to crisp the cheese! I swapped out the mozzarella for shredded fresh Parmesan and it was delicious! Also helped with the calorie count! - 2/21/11

    i made this as a skillet dish (oven safe) with ground turkey and whole wheat pasta. I also added fresh garlic along with the onion when sauting the turkey. Popped the whole pan in the oven for 10 min...delish! family voted it a keeper. - 9/5/07
