Introduction

This is a recipe I modified from one I saw elsewhere. I like combining a little sweetness (craisins) with my heat from the seasoning. Enjoy! This is a recipe I modified from one I saw elsewhere. I like combining a little sweetness (craisins) with my heat from the seasoning. Enjoy!

Ingredients

    1 Chicken Breast, bone and skin removed
    1 T Cajun seasoning

    1 head Romaine Lettuce, shredded
    1 cup Mushrooms, fresh, sliced
    1/2 sweet red Peppers, chopped
    .33 cup Cranberries, dried, sweetened

Directions

Clean and rinse the breast. Once finished, sprinkle the chicken with the seasoning until coated to your satisfaction. Grill until cooked thoroughly.

While chicken is grilling, wash and cut vegetables. Arrange on plates.

Once chicken is cooked, let it rest a few minutes then slice or chop and arrange on the salad.

Dress with your preferred dressing.
